    ♥ Thursday – Roasted Parsnip Soup with Bacon and Shallots
    ♥ Friday – Dinner for Uncle Jarrod’s Birthday
    ♥ Saturday – Spanish Beef with Chorizo – “250 Must Have Slow Cooker recipes”
    ♥ Sunday – Dinner at Grandma & Grandad’s house

    Sorry it’s been a little quiet around here lately. We’re still getting used to being a family of four and are taking it fairly easy most days. This week will be getting back to “normal” – Mr Monkey goes back to work on Tuesday and it will be time for me to work out how to do everything with two children. I’m envisaging the Hug-A-Bub getting a lot of use as Chloe is a snuggle bunny and doesn’t like to be put down. However, she will sleep for an average of 3 hours at a time during the day if she’s held so I will be able to get a lot done. So, in theory I should be able to keep the house tidy and manage to cook dinners as long as she’s snuggled up in the Hug-A-Bub.

    So yes, this means I will be cooking dinners this week. I had planned to cook a few over the last few weeks but Mr Monkey ended up cooking them all. He’s good like that.

    A couple of meals have come over from last week’s meal plan due to changes in our plans but they are fairly simple and I should be fine to cook them.

    Mr Monkey is home on Thursday so he can help me with the soup – it looks fairly simple but as the parsnip needs to be roasted and the bacon cooked separately before making the soup it is a little bit more involved and may be a bit harder for me to do.

    Friday night is my brother’s birthday and we will most likely be heading down there after I pick Lily up from school then pick Mr Monkey up from work. We’ll have to be back fairly early on Saturday as Saturday night’s dinner needs to go in the slow cooker around lunchtime. It will also be my first time doing the trip with Chloe and Lily by myself. We drove down last week but Mr Monkey was with us. Chloe slept the whole way (both times) then so hopefully she does that again.

    So fingers crossed for my first week as a “single” 2 child mother!

    Slowly getting back in to the swing of things. Chloe is now a week old and settling in to the family really well. Lily is besotted with her and I constantly hear “can I have a look at my sister?” She loves to just look at her and touch her head and so far has been really good with her. It took her a little while to realise that Chloe can’t do all of the things that she can do – “do we give her food? Does she have a little highchair? Can she play with my toys?” But now she has realised that she has to wait until Chloe is “bigger” to do some of those things.

    This week’s meal plan is probably a bit more adventurous than what you’ll see in the coming weeks as Mr Monkey is still off work this week and will hopefully be doing most of the cooking, or looking after Chloe while I cook. The recipes have all come from magazines that we’ve picked up the last few weeks – Donna Hay, Super Food Ideas and Healthy Food Guide.

    It’s nice not having to focus so much on the nutritional content of each meal any more – yay for no more Gestational Diabetes! But I am making sure to be a bit “better” than what I was before, although I’ve been craving pasta like crazy.

    It’s actually my birthday today and we’re about to head down to my parents’ house for a special dinner. It will be Chloe’s first really long car trip so it will be interesting to see how she goes.
