Time to get back in to a “routine” after our week camping. We had a fantastic time but it’s nice for life to get back to normal.
Fairly quiet week this week – Lily had her swimming lesson this morning and will have an extra make-up lesson on Thursday for the lesson she missed last week. I have an appointment at the Birth Centre tomorrow and then a Glucose Test on Friday. Mr Monkey is changing his roster to work 5 days a week instead of 4, but starting later and finishing earlier. It means one more night without him home at dinner time but at least he gets a bit more time with Lily in the morning. My night at the Buddhist Centre has been changed to Sunday evenings so I’m hoping to make it there this week.
In terms of meals this week we are keeping things fairly simple. I also have to follow a high carb diet for the 3 days before the glucose test so that has affected the plan somewhat.
I picked up some BBQ pork chops the other day for cheap from the butcher. The Healthy Food Guide Magazine for this month has a recipe for Pork Puttanesca Spaghetti so instead of using pork fillet through the pasta we will simply serve the pasta with the chops.
Lily is fed “dinner” at school on Fridays (at 4.30pm!) so I have decided not to plan too much around what she will eat on those days. Although last Friday she came home and almost ate us out of house and home. This week I decided to make Friday our fish night as Lily is likely to eat the fish if it’s fairly plain and by serving it with the Mexican salad it makes it a bit more interesting for me (and later Mr Monkey).
There’s a great Tofu satay noodle salad in the Healthy Food Guide Magazine this month but Mr Monkey doesn’t really like the rice vermicelli noodles so I’ll be substituting them with hokkien noodles.
I’ve never been a big soup eater but have decided I need to start adding more to our meal plans – they’ll be good over winter and easy to bulk make when the baby is born. I’ve been wanting to try Beth’s Chicken Noodle Soup from Baby Mac for ages so thought I’d give it a go this week.
Update on Lily at school: she started in the “big room” last Friday (the 3-4yo and 4-5yo share a room). She loved it! I wasn’t able to talk to the teachers much but she was so, so happy when I picked her up. I had printed out some photos from our trip and in the Daybook (an email I get each day with photos of what they got up to) it showed her doing “Show & Tell”. She also got to make a bunny face and brought it home. She is so, so proud of it and had to show everyone she could, including family at a party the next day. I can’t wait to see how she progresses now as I think she is going to learn so much.
