Most of the meals this week may seem a little familiar. I’m “re-using” the recipes that we didn’t get around to cooking last week, mostly as I forgot we were spending the weekend at my parents’ house after a visit to one of the mums from our Mum’s Group who has moved out of the area.
Monday we will be driving back home in the morning for Lily’s swimming lesson. Afterwards Mr Monkey has planned to meet up with some of his old work mates for lunch and then we’ll be heading home for some relaxing before Mr Monkey gets in to a busy, and stressful, work week. I’ve planned the Sweet & Sour Chicken from last week for dinner.
Tuesday and Wednesday should be the usual “at home doing housework” days. Tuesday night I’ve planned a simple Veggie Risotto in order to get rid of some of the veggies we have in the fridge. Wednesday night will be the good old staple – Spag Bol.
Thursday night Mr Monkey will (hopefully!) be home from work and I’ve planned the Fish & vegetable parcels that I’ve been meaning to cook for weeks. I *am* going to cook it this week!
Friday night Mr Monkey should hopefully be home again and I’ve planned the Sausage & Quinoa Paella that I’ve also been meaning to cook for weeks.
Saturday I thought I’d try something new. We made a Vietnamese Pho a few months ago and loved it so I thought we’d try another one – Vietname Beef Pho. I’m looking forward to it.
Sunday we are going to my In-Laws for lunch for Mr Monkey’s Grandma’s birthday. I haven’t planned anything for dinner as I’m not sure when we will be home. We’ll either just throw something together or get takeaway.
So here’s the meal plan:
Monday – Sweet & Sour Chicken
Tuesday – Veggie Risotto
Wednesday - Spag Bol
Thursday - Fish & vegetable parcels
Friday – NSausage & Quinoa Paella
Saturday - Vietname Beef Pho
Sunday - N/A
