I was recently contacted by McCormick and asked if I was willing to try two of their recipes using their new Recipe Creations products. I had seen these at the Kids Business Bloggers BBQ and thought they were a great idea: each pack contains just enough herbs and spices to create the meal to serve 4 people. They are great for home cooks who aren’t comfortable using herbs and spices (e.g. knowing which herbs work with what and how much to use) and are also great to create a simple, yummy meal without much thought.

Here’s the recipe:

McCormick’s Herb Chicken & Potatoes

Yield: Serves 4

McCormick’s Herb Chicken & Potatoes

Ingredients

  • 1kg Baby chat potatoes, halved
  • 2 Tbsp oil
  • 1 tsp salt & 1 tsp pepper
  • 1 red onion, halved and sliced
  • Juice and zest of 1 lemon
  • 2 Tbsp honey
  • 500g chicken fillets, trimmed
  • 1 x 9g McCormick® Recipe Creations™ Herb Chicken and Potatoes
  • Includes:
  • *1 tsp McCormick® Oregano leaves
  • *1 tsp McCormick® Paprika
  • *1 tsp McCormick® Garlic Granules
  • *1/2 tsp McCormick® Rosemary leaves
  • *1 tsp McCormick® Thyme leaves
  • *1 tsp McCormick® Coriander Seeds, ground

Instructions

  1. Preheat oven to 210ºC. Line a large baking tray with baking paper.
  2. Add potatoes, 1 1/2 tbsp oil, oregano, paprika, 1/2 tsp garlic, 1/2 tsp rosemary, 1/2 tsp salt and 1/2 tsp pepper in a large bowl and mix well. Spread coated potatoes onto tray and bake for 30 minutes.
  3. Add onion to the bowl, toss to coat and set aside.
  4. Combine all remaining ingredients in a second bowl and toss to coat chicken.
  5. Place chicken fillets on baking tray with potatoes and scatter chicken with onions.
  6. Reduce temperature to 180°C, return tray to oven and cook for a further 20-25 minutes until chicken is tender and potatoes golden brown.
  7. Serve roasted chicken and potatoes with steamed greens and salad.

You may notice that our chicken didn’t look much like the one in the picture. The recipe just says fillets but Mr Monkey suggested we use chicken thigh as they are tastier and better for roasting.

The potatoes were oh so good! Nothing better than some roast potatoes, especially with yummy herbs and spices. They were also very easy to cook – just coat in the herbs and spices and oil and then chuck in a roasting pan.

The chicken was great with a nice acidity from the lemon. I served it all with a simple rocket salad and Lily loved it too. She’s a big fan of potatoes so she was happy.

I’ll definitely keep this recipe in our repertoire – the herbs and spices are ones we have at home anyway and it will make a great “Sunday roast” alternative.
