  1. {Recipe} – Chocolate Gingerbread Cupcakes

    I was looking for a recipe for cupcakes to make to take to a Christmas picnic with a few of my friends. I decided that plain boring old cupcakes just weren’t going to cut it and I came across this recipe on Cupcake Project.

    They were very easy to make and I had everything in the cupboard except for the molasses which were easy to buy from Woolworths. Lily helped me to mix everything together and I had to stop her at numerous points as she wanted to keep adding more of the spices (I think she just liked shaking the bottle).

    I cooked the cupcakes for the 20 minutes that the recipe states (175 degree celsius oven) and they seemed cooked although are quite soft. I think I actually prefer this as they ended up being very nice and moist.

    The original recipe included an orange glaze as a topping but I just topped them with cream and strawberries to make santa hats. They looked fantastic and the cream really helped to cut through the almost bitterness of the cupcakes.

    They went down very well except with Mr Monkey – he’s a little strange and doesn’t like gingerbread or hot cross buns or basically anything sweet with cinnamon and cloves and other spices. Weirdo.  But otherwise they went down really well!

    I just dropped the rest off to my coffee shop (Coffee Alchemy) to say thank you for the year of coffees and I’m hoping they enjoy them too.

    So, definitely give these cupcakes a try! They seem like ordinary yummy chocolate cupcakes but the spices give a different sophistication. Will hopefully become a Christmas tradition around here :)

    I’ve decided to spread some love around (and perhaps gain a few sneaky followers ) by doing a weekly feature on some of the blogs I love to read. Some are housework related, most are not.

    After Lily was born I suddenly become fascinated with cupcakes. Specifically with baking them. I somehow stumbled upon The Cupcake Project and suddenly I was even more obsessed.

    I’ll let Stef explain how & why she started the blog:

    At dinner one night, some good friends mentioned that they were trying to decide where to buy cupcakes for their wedding. I surprised myself and others at the table by offering to bake for them (I had never baked a cupcake before – ever!). My friends surprised me by accepting. Their wedding was Dec 31, 2007 and I had exactly nine months to learn to bake wedding-worthy cupcakes. I baked a new cupcake for them every week and let them choose their three favorites for the big day. In doing so, I began to go a bit cupcake crazy! My cupcake obsession continues to grow. I completed a second wedding on Oct. 12, 2008, a third one on May 30, 2010, and a fourth one in March 26, 2011. Even when I’m not working on a specific project, my quest to master the cupcake endures. Each week, I feature new cupcake recipes, ingredient and technique spotlights, and baking-related product giveaways.

    My favourite recipe from The Cupcake Project is Pistachio Cake Cupcakes with Rosemary and a Cherry Glaze. Sounds interesting doesn’t it? And I have to say, it is. They are more savoury than your usual cupcake but the cherry glaze adds a nice subtle sweetness.

    I also love her Vanilla Bean Buttercream and Chocolate Cream Cheese Frostings. They are both very easily customised and I used the chocolate cream cheese recipe as the basis of my Jaffa Cupcakes with Orange Marmalade Cream Cheese Frosting.
