  1. {Recipe} – Heston Blumenthal’s Grilled Fish with Vanilla Butter & Brussels Sprouts

    Have you ever not liked something simply because… well, hardly anyone else liked it? Brussels sprouts was that thing for me. I just assumed I didn’t like Brussels sprouts because really, it’s not very often that you hear some one say “Mmm! Brussels sprouts! Yay!” Plus it probably doesn’t help that my Dad hates them. And really, it’s basically a requirement of childhood to say no to Brussels sprouts!

    But I can’t really remember having tried them. I’m not a fan of cabbage so just assumed they would be like mini cabbages. Which I suppose they essentially are. One day Mr Monkey mentioned that he likes them and I mentioned that I sort of didn’t. He decided to cook them for me and I can see why he likes them! Anything tastes good when you cook it in heaps of butter!!

    So when I gave Mr Monkey Heston Blumenthal’s new book, Heston Blumenthal At Home and saw that there was a recipe for Brussels Sprouts in there I knew I’d have to give them a try.

    Of course, they can’t quite make up a meal by themselves so I had to find something else to cook as the “main” part of the dish. I’m a big fish lover so the Grilled Sea Bass with Vanilla Butter sounded divine. (I couldn’t get sea bass so used a different fish; I can’t remember which now but I just asked the fishmonger for a good substitute for sea bass).

    I loooove vanilla. Fresh vanilla pods, yum! The little tubs of vanilla paste, oh. My. God. Vanilla scented candles, yes please!! And Mr Monkey and I are quite fond of trying new things and things that are a little “out there” so combining vanilla with fish wasn’t a big deal for me.

    The vanilla butter is super easy to make (I used the vanilla paste which was very easy to combine with the butter) and tastes delicious! I had to new careful to ration how much I put on my fish because I could easily eat the whole amount. Unfortunately it got pushed to the back of the fridge after dinner and I forgot about it! I would’ve loved to see what else I could use it for. I’m sure it would be good for baking anything that needs butter and vanilla but I imagine it would be heaven on toast! I may just have to make some more to find out!

    Heston gives great, straightforward instructions for cooking the fish and it turned out perfect and flaky.

    The best part about the Brussels sprouts was the fact that you separate the leaves – it keeps them nice and fresh, they don’t become a gluggy mess and they are really appetizing. Of course, the butter and bacon don’t hurt either!

    No, this isn’t the healthiest dish around but boy is it delicious! It would be great for small dinner parties when you can indulge a little.

    Grilled Sea Bass with Vanilla Butter

    {Recipe} – Grilled Sea Bass (Heston Blumenthal)

    {Recipe} – Grilled Sea Bass (Heston Blumenthal)

    Ingredients

    • Groundnut or grapeseed oil
    • 4 sea bass fillets, skin on
    • 40g vanilla butter (see next recipe)

    Instructions

    1. Cover the bottom of a frying pan with a thin layer of oil, and heat over a high heat until extremely hot.
    2. Season both sides of fish with salt and place skin-side down in the hot pan to crisp for 90 seconds. Place a lightweight object such as a ramekin on top of the fish to keep it from curling as it cooks. Flip the fish over for a further 60 seconds and remove the fillets from the pan straight on to the serving plates.
    3. Place 10g of vanilla butter on top of each fillet. As the butter melts, spoon it over the fillets to coat.

    Vanilla Butter

    {Recipe} – Vanilla Butter (Heston Blumenthal)

    {Recipe} – Vanilla Butter (Heston Blumenthal)

    Ingredients

    • 3 vanilla pods
    • 125g unsalted butter, at room temperature

    Instructions

    1. Halve the vanilla pods lengthways and, using a teaspoon, scrape out the seeds.
    2. Mix the butter with the vanilla seeds, using a hand blender.
    3. Roll into a log and wrap in parchment paper or place in a bowl. Keep in the fridge until required (for up to a week), or freeze for a month.

    Brussels Sprouts with Bacon

    {Recipe} – Brussels Sprouts with bacon

    Ingredients

    • 5 slices of smoked bacon, cut into lardons
    • 400g Brussels sprouts
    • 50g unsalted butter
    • Salt and black pepper

    Instructions

    1. Fry the bacon lardons in a frying pan over a medium heat until they are soft but not coloured (approximately 5 minutes). Remove from the pan with a slotted spoon and drain on kitchen paper. Set aside. Keep the bacon fat in the pan.
    2. Slice the bases off the Brussels sprouts and carefully separate the leaves, pulling them off the sprout. Alternatively, shred them finely with a sharp knife.
    3. Melt the butter with the bacon fat in the frying pan over a medium-low heat. When the butter is foaming, add the Brussels leaves and stir to coat them. Add 2 tablespoons of water and cover the pan with a lid.
    4. Allow to cook for 5 minutes, stir in the lardons and season with salt and freshly ground pepper.

    As I mentioned last week I’ve asked Mr Monkey to go through his copy of “Heston Blumenthal At Home” and pick a few meals for me to try. Although they are all fantastic recipes, a few were a bit too involved for me – mostly slow cooking or longer recipes. Still, I managed to choose two recipes that look great.

    Today we have Lily’s swimming lesson in the morning, which my parents are coming to watch. After that we don’t have many plans and I’m not sure how long my parents are staying. I’ve planned to make a Chicken Pad Thai with a kit that Mr Monkey bought me from Thailand, but as it is only 2 serves it will depend if my parents are staying for dinner. If they are, I’ll either cook up a chicken risotto or we’ll get takeaway or go to the pub.

    Tuesday is grocery day and Mr Monkey is working all day. I’ll pick up some fish while doing the groceries (not sure if I will get Sea Bass) and quickly make up some vanilla butter (simply mix vanilla paste through softened butter). I did some fruit and vegetable shopping on Saturday and was able to pick up some Brussels sprouts. I’m not a huge Brussels sprout fan but Mr Monkey cooked them for me one night (in lots and lots of butter) and they were quite yummy so I thought I’d give the Heston recipe a go. He recommends to separate the leaves so that they don’t over cook and become mushy.

    Wednesday will probably be spent doing housework and then the delightful Amy is coming over after work for a pizza and movie night. I can’t wait! It’s been way too long between gossip sessions.

    Thursday is Australia Day and at this stage Mr Monkey actually has the day off. My Dad has to work in the morning and then after that he and my Mum are coming up to go to the celebrations in the park across the road from our house. I haven’t planned anything for dinner that night as we will probably just head to the pub or get some takeaway in the park.

    Not much planned from Friday to Sunday except for some yummy meals. Friday night I’m trialling Heston’s version of a Carbonara.

    For the last two meals I looked at the February edition of The Healthy Food Guide. This is a great magazine with tips for a healthier lifestyle, the latest in health news and simple, healthy recipes. I buy it each month and normally use quite a few recipes. And no, I haven’t been asked to write this and most definitely haven’t been paid to write this. I am simply a big fan of the magazine.

    So Saturday is a simple Lemony Pasta with Poached Eggs. It’s our vegetarian meal for the week and I haven’t actually cooked poached eggs before so it should be interesting.

    Sunday is a Seared Beef with a Soba Noodle Salad. Sounds good! It includes asparagus & radishes which I’ve never really liked but I thought I’d give them another go.

    Another great idea I got from this HFG is their “10 Ingredients = 20 Lunches.” I find lunches very difficult – sandwiches get old quickly, I normally want something that is quick yet tasty and it’s hard to do that with Lily underfoot, or trying to take a break from housework. This is a really simple yet really helpful guide to using just 10 core ingredients to make 20 different simple lunches that can be made at work or at home.

    The core ingredients are:
    Canned tuna in spring water
    eggs
    reduced-fat cheese
    baby spinach or rocket
    tomatoes
    potatoes
    wholemeal pita bread
    no-added-salt four bean mix
    green onions
    avocado

    The meals that can then be made from these are:
    Cheese & Bean baked potato
    Pita Pocket w/ tuna, baby spinach, tomato & avocado
    Bean and cheese quesadilla
    Tuna, spinach, avocado & egg salad
    Toasted pita chips with dip
    Grilled cheese and tomato pita toasties
    Savoury potato and tuna stack
    Pita pocket w/ beans, avocado and tomato
    Tuna and potato salad
    Tuna nicoise salad w/ croutons
    Salmon and spinach frittata
    Eggs w/ potato pancakes
    Tomato and cheese omelette
    Poached eggs on pita with grilled tomatoes and spinach
    Vegie scrambled eggs
    bean and cheese nachos
    Potato wedges with tuna and tomato salsa
    Tuna melt with green salad
    Boiled egg with cheese and tomate toasties
    Salmon “shepherd’s pie”

    I’m sure this seems really simple to other people but for me, this list is fantastic! I don’t have to think about what I could make, I just need to have the ingredients in the fridge and the list of meals on my fridge. Of course, I won’t need all 20 meals but this way I can pick and choose which ones I feel like on the day.

    I’m looking forward to trying this idea and I will let you know how it goes!
